If you have the huckleberries and you want the ice cream, you may be able to make your own.  Many people do and huckleberry ice cream recipes can be found all over the Web.  Frankly, we don’t have any preferences for the recipes.  We’re not able to make them all and try them.

But we have never met a huckleberry ice cream we did not enjoy.

There are two ways to make huckleberry ice cream.  You can include whole huckleberries or you can just use flavoring or extract.  Either way you want a natural product.   And who is to say you cannot blend in huckleberry juice and real huckleberries?

To make real huckleberry ice cream you have to cook the huckleberries into a base, then cool down the base, and then add the base to your cream when you churn it.  You will need butter, milk (or cream), eggs, and sugar in addition to your huckleberries.

Basically you heat the huckleberries in a sauce pan over medium to medium-high heat.  Add your sugar.  You need to whisk them until they become bubbly.   Then you reduce.  Some recipes include other ingredients in this phrase, like lemon juice.  Don’t assume all recipes are the same.

In fact you can probably use any blueberry or berry-based recipe to make your ice cream.  Huckleberries are closely related to blueberries and most experts agree that blueberry recipes are easily adapted to use huckleberries.  Keep in mind that huckleberries are smaller than blueberries so you may need a few more by volume or weight to complete your recipe.

If you don’t have the time or the means to make your own ice cream you can try something different.  Assuming you have the huckleberries you can make a huckleberry ice cream smoothie.  Take a quarter cup of huckleberries and mix them with a cup to a pint (vary according to taste) of vanilla ice cream.  Blend them together.  We loved it.  Some people recommend adding a huckleberry extract or flavoring syrup but remember the syrups have a lot of sugar in them.  The ice cream’s sugar should be enough to tone down the slightly tart flavor of the huckleberries.
